Mexican Chicken Pho

 1 tbsp butter
 2 tbsp oil
 3 sticks celery, diced
 3 carrots, sliced
 1 cup onion, chopped
 ½ tbsp garlic, minced
 ½ tbsp Foothill Farms® Italian Salad Dressing & Seasoning Mix
 1 tsp black pepper
 salt, to taste
 4 tbsp Orrington Farms® Broth Base Chicken Flavored
 7 cups water
 3 chicken breasts
 1 (8.8 oz) pack rice noodles
 ½ cup cilantro
 1 lime, juiced

In a big pot over medium heat, mix butter and oil, then add celery, carrots, onion, and minced garlic. Cook for 5 minutes or until onions become translucent.

Mix in Foothill Farms® Italian Salad Dressing & Seasoning Mix, black pepper, salt, and Orrington Farms® Broth Base Chicken Flavored.

Pour in water, add chicken breasts, cover and cook on medium low heat for about 25 minutes or until chicken is fully cooked. The minimum internal temperature of the chicken should be 165℉.

Remove chicken and shred.

In the same pot, cook rice noodles according to package instructions.

Add the shredded chicken back to the pot, mix and top off with cilantro and lime juice.

Cover and cook on low heat for 10 minutes. Serve.
